Soft, spreadable cream with a compact, uniform consistency. Dark chocolate brown colour with the distinctive taste of cocoa due to the high percentage of low-fat cocoa (25%) while the percentage of hazelnut paste (6%) softens it and rounds off the aromatic profile. Contains no hydrogenated fats.
Operating recommendations:
In chocolatier, to be used in a pure form for fillings or with added chocolate to give it more structure. Excellent with the addition of inclusions.
In pastry, suitable for flavouring confectioner’s cream, whipped cream and butter cream. Ideal also as icing for cakes and petit fours, after heating to 30/32°C.
